Notty Tummy!

Hari ni perut sgt2 la notty! Notty sebab makan heavy sgta hari ni, akibat tofu yg tersimpan dalam fridge 4 hari tu dah berlendir, so menu bertukar la hari ni!

Since yg ada kat kitchen tu is the sweet potato yg tak diusik2, lebih baik buat something, if not busuk pula jadi macam tofu tadi kan... Dengan niat tak nak membazir, menu hari ni sweet potatoes la for lunch n dinner yer.

For breakfast I had carrot n grape fruit juice + an apple. Then around 10am, perut ni mengada2 lapar, so I baked about 5 falafel. Lunch ingat nak buat tahu sumbat aje, so since the tofu dah tak elok, I made Baked Sweet Potatoes with Coriander, Parsley n Spicy Dressing.

I used 2 small potatoes n 1 medium sweet potatoes, chunked. Sprinkle them with salt, pepper n drizzle olive oil generously. Bake for 30 minutes or until potatoes r tender.

Sementara tu boleh la siapkan dressing. I wanted something spicy today, so I just used 1 tspn of sweet paprika n 1 tspn of chilli powder + 3 tbpn of grapefruit juice, of course u can substitute with lemon or lime juice. Give it a good stir n set aside.

Once ur potatoes dah tender, tunggu suam, n boleh la u guys chopped coriander n parsley. Combine potatoes, ur green leafy n dressing, serves while hot!


Masa I chunked the sweet potatoes tu dtg la ilham nak buat soup ala2 kat hotel gitu. So here we go! I sauteed 2 medium onions, 5 cloves of garlic, 1 stick celery, 1 tomatoes + olive oil until tender. The I add on 1 1/2 - 2 cups of water with 3 medium sweet potatoes n 1 carrot, chunked n boil them until tender.

While waiting, I put 1 tomato n 1 bell green bell pepper (sebab I tak ader yg merah) drizzled with olive oil into the oven. Baked at 200°c for about 30-45mins.

Once the soup is done, add 1 tspn sweet paprika n 2 tspn chilli powder (klu tak suka hot, sila kurangkan yer), generous white n black pepper, salt to taste. I also add juice from 1/4 of grape fruit, (klu tak der, ganti la dgn lemon or lime yer). Then I let the soup simmer for 10 minutes. Once cooked, I biar sup tu suam2 kuku, before I pureed them in food processor.


Lepas dah pureed for about 3-5 minutes or until smooth, I transferred back into the pot n let simmer for another 3-5 mins. Served with baked pepper n tomato tadi :) Alhamdulillah kenyang!


Now I'm thinking to recycle the leftover soup as spaghetti sauce tomorrow but haiyi ask for roti john n haziq wants to bring tuna sandwich, so the leftover soup masuk fridge aje la dulu yer :) Now, reheating the soup for hubby
's late nite snacks ♥.

Baked Sardine with Apple, Carrot, Grape Fruit Slaw

This recipe (my lunch, yesterday) calls for trout or salmon acli, but yg ader dalam fridge I is only sardine :p, sardine pun sardine la yer, yg penting sardine ni is the richest source of omega 3.

Using parchment paper, I put 2 sardines with ginger, garlic n grapefruit, sliced (I recommend u guys to use orange or lemon instead of grapefruit). Drizzle with olive oil, black pepper n salt to taste. Fold the parchment paper and baked for 20 minutes at 200°c.

While waiting for the fish, I prepared the slaw made from apple, carrot n grape fruit (again please use orange since the grapefruit taste bitter). I used 1 apple, julienned +half carrot, julienned + 1/4 grape fruit, julienned + grapefruit juice + black pepper to taste.

I sebenarnya nak habiskan stock grape fruit in my kitchen, so I just trial n error aje la in my diet. Tapikan, ada study that told if we consume half of grape juice b4 every meals, it will help to speed up our fat loss. Ade juga yg I bace from the internet, those yg amalkan a cup of grape fruit juice in their breakfast everyday flatten their tummy days by days... menarik kan? tapi... ya Allah masam n pahit buah ni!

Day 19

Alhamdulillah... it's been day 19 today and I have lost 8 kg. I haven't started my cardio thus I guess the weight won't go down so fast. I try to eat healthy as much as I can and still omit sugar, wheat n rice in my diet. Salt tu kadang kala terbabas la juga :p

Today's breakfast I had green juice and watermelon. That would be my typical breakfast menu for time being. Now my stomach starting to growl rock n roll :p, asking for some solid food! Yesterday, I tried to find Quinoa but the price was so expensive, 500gm for rm19, wow! bankrupt la kalau beli. I guess today I just cook veggie soup with some tofu again, boring stuff but insyaAllah will satisfy my stomach.

This is my 12 leaf salad with orange wedges and orange dressing. I bought this salad for rm8 which is quite expensive. But it can be used up to 5-6 servings if u combine with other things such as cucumber, tomatoes, celery n carrot. For the 1st time I tasted different salad leaf n wild rocket tasted the worst! the taste is so rich n peppery! I guess I must really teach my lidah to those leafy herbs :)

This morning, hubby had himself carrot and grape fruit juice, but that was just before he ate 1 roti bom, 1 lempeng kelapa with fish curry and horlics hahah. I sometimes juice some red apples for the kids too and force them to drink the juice before their breakfast.

sekarang ni I ada banyak sgt stock grape fruit in my kitchen. I bought 8 grape fruit for rm10 je. Besar2 pula tu, meme puas hati. When I was in giant yesterday, i saw they sell 1 grape fruit for rm3. Huh! so lucky that mine jatuh rm1.25 only sebiji.

But when stock banyak sgt, dah la tatau nak buat apa with the fruit. Sebab I macam tak boleh handle the sour n bitter of the that grape fruit. Nampak gaye buat juice aje la for the time being :) Meh la share recipes, for those yg tahu apa nak buat with those fruit yer!

Chicken Kabsa n Shirazi Salad

Last week I made spicy morrocan rice which is very spicy sampai meletup2 dalam mulut, but dem, I like those spices cause it made me feel very warm inside. Yer la since I have been eating veggie n fruits aje for the rest 2 weeks kan..

Pastu I masak beef pilaf n beef tagine pulak the next day since the marrocan spice ader byk lagi. All turned out very well especially the beef tagine. Yg kureng nasi je, quite bland that time sebab dah lama tak pakai garam, so even rasa sedikit garam, I dah rasa salty, after the rice is cooked, tawar sikit but still sedap accompanied with the beef tagine.

This week, I made nasi kabsa pula, a mild version of nasi arab. I can see the boys really enjoy nasi kabsa compare to morrocan rice which was very rich in taste n the n nasi pilaf daging that I made before. So here is the recipe as requested by some relatives n friends :)


My version of Chicken Kabsa
5 pot rice
2 carrots
1 box raisins
1 cup chickpea

1 whole chicken
1 tbsp kabsa spice
Salt to taste
(marinate them for at least 1 hour)

2 big onions
5 cloves garlic
1 cinnamon stick
1 star anise
5 cardamom seeds
3 big tomatoes chopped
1 tbsp kabsa spice
Water

Sautee the onions, garlic, cinnamon stick, star anise n cardamom seeds for 2-3 mins. Add chopped tomatoes and stir for until tomatoes soft. Add kabsa spice and stir again. Now u can add the chicken and cook for 8 minutes. Add chickpea n water just enough to cover the chicken, salt to taste. Cover and simmer until the chicken is cooked.

After chicken is cooked, add rice, carrot, raisins and salt to taste. Stir well for a while just to ensure rice, carrot and raisins are well mix with the chicken gravy. Bring to boil, then reduce heat and cook until the rice is tender and done.

Kabsa Spice
2 part coriander seeds
2 part cardamon seeds
1 part of cumin seeds
1 part of fennel seeds
1 part of black peppercorn
1 part of cloves flower
(sangai hingga naik bau)

1 part of turmeric powder
1 part of chilli powder
1 part of ground ginger

Blend all the spices together to get make them into powder.

Shirazi Salad
2 japanese cucumber chopped
2 tomatoes chopped
2 onios chopped
Bunch of coriander chopped
½ lime juice to drizzle
Black pepper to taste

Combine all the above and keep in fridge and serves cold

Tara!! Da siap nasi n salad, sila la ambil pinggan n jemput makan semua :)

Vinaigrette

I am so happy n feel so blessed when many friends n relatives are trying to live n eat healthily now. But most of them complaint that they can't eat salad the way I do. When I asked them, what they actually used for dressing, most of them eating their salad just like that. That's why their salad taste bland. So here I am, going to share with u guys out there, basic but diff vinaigrette that I use when I make my salad. Believe me, they'll taste great! Drizzle vinaigrette to salad just before u want to eat them is the best!

My recipes doesn't have salt n sugar because I like their natural taste, feel free to add them :)



Apple Vinaigrette
(serves 3-5, depends how much u guys drizzles)

Juice from 1 big red apple
1 tspn of extra virgin olive oil
splash of mustard
splash of black pepper to taste
(put all ingredients in a bottle n shake well)
Serves cold!

Tomato Vinaigrette
Juice from 1 tomato
1 tspn of extra virgin olive oil
splash of mustard
splash of black pepper

Orange Vinaigrette
Juice from 1 tomato
1 tspn of extra virgin olive oil
splash of mustard
splash of black pepper

Lime/Lemon Vinaigrette
Juice from 1 lime
splash of mustard
1 tspn of honey
1 clove garlic - minced
black pepper to taste
